Parmigiano Reggiano di Sola Bruna Alpina (1879) cows
An historically important unique Parmiggiano Reggiano DOP cheese made only from this one Alpine cow breed which feeds on Alpine meadows. Aged for 24 months, the result is rich, creamy and fruity that sets itself apart from most other Reggiano cheeses. Small production, over time the salt granules form with the aging process. This cheese is protected by the EU and can only feed in pollution free non GMO mountain pastures.
This aged Parmigiano Reggiano can be paired with more or less structured red wines, such as Sangiovese from Romagna, Gutturnio, or Chianti Classico. It's great when served sliced into petals in a fruit salad (pears, apples, grapefruit, orange) dressed with Traditional Balsamic Vinegar of Reggio Emilia. The cheese can also be enjoyed with any kind of dried fruit like walnuts, hazelnuts, or figs and of course on pasta, gnocchi and risotto dishes, its one of the most flexible and well known (and most badly copied) cheeses in the world.
