Taggiasca olives are grown soley on the steep slopes of Liguria and highly prized due to the calcium rich marine breeze exposed soil and always picked by hand. Made exclusively with this prestigious olive in Liguria (produced in Dolcedo (Liguria) by hand for almost a century. This type of oil is of high quality for using raw on mozzarelle, tomatoes and basil, in minestrone and soups etc but also for shallow frying meats, fish, vegetables in pastella etc as it is a good all rounder of good quality. We were particularly keen to get Ghiglione for YOU our customer and when you try it you will understand why. 

It was introduced to Liguria between the late 7th and early 8th centuries, brought by the monks of Saint Columbanus from the Lerins monastery in Provence. Taggiasca olive oil has very low acidity, resulting in an extremely low percentage of oleic acid, less than 0.5%, which attests to the product’s high organoleptic qualities. It should be stored in dark, cool, and dry conditions and primarily consumed raw.

Produce with only Ligurian Taggiasca olives.

Flavour - Its defining characteristics include a fragrant aroma, a fruity flavour that is not overly intense but leans towards sweetness, with hints of pine nut or raw artichoke, along with a subtle spiciness. Delicate, mild and smooth.
