Fregola is a type of pasta 2-3mm in size which is toasted. It has an amazing nutty flavour and is a hard-to-find ingredient even in the UK. It is similar to North African berkoukes and Israeli ptitim, 500g pack. Cooks in 12 minutes. Fregola or fregula tostata is the large Sardinian pasta, similar to giant couscous. For a classic Sardinian dish, simmer the fregola in a tomato sauce and serve with clams, meat sauces, fish, in soup, or can be cooked like a risotto. No preservatives or colours are used in the production, everything is natural and produced with a lot of patience. The dough is made from the highest quality durum wheat semolina and rolled by hand for 36 hours at a low temperature.
