Pumpkin Rice

Pumpkin Rice By Lina Stores, Soho, London


Serves 4

Ingredients:

500 g arborio rice
200 g pumpkin, peeled and diced
salt

50 g butter
2 tablespoons grated Parmesan cheese

Boil the rice and the pumpkin together in salted water until tender. Drain and mash the
pumpkin into the rice. Add the butter and Parmesan and mix well. Serve piping hot.
