Hard cheese, so posted without the need for ice block. Provolone is one of those underrated and underused cheeses in the UK. The Dolce (Sweet) one is too mild, but the piccante (Strong) is where the flavour is at. The US on the otherhand uses stacks of the stuff and every Italian sandwich has 'provolone' (said with a NY accent!) in it.
