Green lentils have a strong and persistent taste.
They don’t overcook and that’s why they are to be preferred when it comes to making savoury soups and salads or stewed as a side dish for meat, fish or vegetarian courses if served with cereals and your favourite vegetables.
The lentil is small and tender and naturally varies in colour from yellow to green to red and it needs no soaking, cooking from dry in just 20 minutes.
It is superb 'in umido' cooked with some pancetta (bacon), onion and some broth.
400g packet for eating, not planting.
Traditionally eaten at New Year.
