Cirio Sauce, Amatriciana and Datterini Tomato 350g
Originating in the comune (municipality) of Amatrice (in the mountainous province of Rieti of the Lazio region), the amatriciana is one of the best known pasta sauces in present-day Roman and Italian cuisine. This version made traditionally with Italian pancetta but with baby datterini plum tomatoes which are sweet and improve on this famous pasta sauce which is packed with flavour. Use either spaghetti or a short shape that will hold the sauce like penne, fusilli o farfalle for instance and serve with a local red wine.
