Cirillini is the Italian name for small curly pasta tubes but you can use any pasta shape in this
dish. Make this lovely, fresh-flavoured dish when you want something healthy and delicious
after the excesses of Christmas. It’s also a great way to get kids to eat courgettes! Serves 4

Ingredients:

200 g cirillini pasta
2 tablespoons extra-virgin olive oil
2 cloves of garlic, crushed
1 medium courgette, coarsely grated

pinch of dried chilli flakes
400 g can pomodorini cherry tomatoes
salt and freshly ground black pepper
fresh Parmesan cheese, to serve

Boil the pasta in a large pan of lightly salted water for 7 minutes – drain thoroughly.
Meanwhile, heat the olive oil gently in a saucepan along with the crushed garlic. Add the
grated courgette to the pan and sauté for 1–2 minutes. Add a pinch of dried chilli flakes followed
by the pomodorini cherry tomatoes. Season and stir well. Cover the pan and simmer gently for
4–5 minutes. Add the cooked pasta to the pan and stir well to combine. Spoon into warmed
serving bowls and grate over some fresh Parmesan. Serve immediately.
