Purple asparagus Violette of Albenga 10 crowns
A2. Historic variety from Liguria from at least 1570 when it was described in the book ""Dell'arte del Cucinare' by Bartolomeo Scappi but it declined dangerously because on the terraces of Liguria each spear had to be staked so it was very labour intensive. Thankfully, it survived and Raggi have been reproducing it again in quantities large enough to sell. A very high quality variety, flavoursome. Highly esteemed gastronomic variety used with black truffles, omelette, crepes, torta di patata, risotto, pasta and potatoes or pan fried with butter.
Sow Nov-Apr by digging a trench 20cm deep, and place a crown in horizontally every 25cm (4 per metre) with some manure dug into the soil. Allow 1m per row. After a year, put another 5cms of soil on top and harvest only 2-3 asparagus per plant. When the season has finished (end spring – summer), allow the plants to develop. In autumn, cut back to soil level and add some mature manure. Always cut asparagus below soil level, keep clear of weeds and hoe carefully so as not to damage the plants.

What would our hungry, thieving neighbours do if I didn't buy my 3rd lot of crowns from Franchi? In order for us to have some too? May and June or at least until 21 June we are eating and harvesting another Franchi delight. My kitchen Sings because of Franchi!

Asparagus corms
Coming up very nicely. (Suggest surrounding the corms where they emerge from the soil, with cotton wool, which has been successful in deterring the slugs, which initially nibbled them, when they first came up)
