Reggiano is made only in the Parma region and surrounding areas DOP and only on local grass and cereals. It tends to be a little saltier and is aged a minimum of 12 months. The milk is delivered wtihin 2 hours and must not fall below 18c to obtain the right bacteria to make the cheese. Reggiano tends to have a stronger, nuttier flavour.
