Puntarelle is a staple in Italian cuisine, particularly in Rome and its surrounding regions. Its cultivation and use in Italian cooking date back centuries, with its peak season in the winter months making it a cherished ingredient in traditional winter salads and dishes. Produces tender upright growing dark green leaves to 30 cm (12″) long. A must have for any traditional Italian salads. Harvest as baby greens in as quick as 24 days after sprouting or harvest later into the season. Taste: Italian Puntarelle is a unique variety of chicory, celebrated for its long, slender shoots and dandelion-like leaves. The shoots, which are the most prized part of the plant, have a crisp texture and a bitter, slightly peppery taste that becomes milder and almost nutty when dressed. The leaves and shoots offer a refreshing bite, perfect for adding complexity to salads and side dishes. Puntarelle is traditionally harvested in the cooler months, from late autumn through to early spring. Puntarelle is most famously used in the classic Roman salad, "Puntarelle alla Romana," where it is dressed with a vibrant anchovy and garlic vinaigrette. Its bold flavour pairs well with rich, salty ingredients like anchovies, capers, and olives, as well as with citrus and garlic. It can also be lightly sautéed to mellow its bitterness.

Store Puntarelle in the crisper drawer of your refrigerator, wrapped in a damp cloth or in a plastic bag, to keep it fresh for up to a week.
