A beautifully made traditional Cinghiale ragu from Toscany- typical from the Alps to the Appenines where they are found in abundance and where this ragu is commonly made and eaten. Serve with pappardelle, tagliatelle, paccheri, or any pasta that will hold a sauce like pipa or gomiti (pipe or elbows) for example.
