Bottarga is the Italian delicacy of salted, air dried tuna fish roe. It is usually sold in blocks and then grated on to seafood pasta, rice dishes, on eggs and in to Panzanella salad or on to bruschetta or seafood. it is as sought after as truffles in Italy and this one comes pre grated for ease.
