A sought after black rice, rich and with hints of sandal wood and sourdough bread, it is wonderful with gorgonzola, octopus and many other risotto sauces, truffles and mushrooms of course, seafood or vegetable sauce. Also known as 'Forbidden Rice' it is hard to find, produced in small quantities and is produced in the Po Valley in Italy, though it has Chinese roots originally.
